Gruene Door’s Easy Cheesy Beer Soup

Heat butter in saucepan and add flour and stir to create a roux. Next pour in chicken stock. When heated, slowly add cheese and whisk until all is melted. Add beer. Check seasoning. At this point you can add salt and/or pepper.

Ingredients
4 T Butter
¼ c Flour
4 c Chicken Stock
3-4 c Velveeta OR Cheddar cheese (amount depends on how thick you like your soup)
½ bottle beer (6-oz)

You can top with crumbled bacon, parsley or croutons.
